The sirloin roast is cut from the beef just in front of the hind legs. These cuts are not as tender as the loin and while a sirloin roast can be roasted in the oven, the roast will benefit from the braising method of cooking. Braising is also an excellent way to cook a frozen sirloin roast, as the added moisture will keep the roast from drying out as it cooks.
Place the frozen sirloin roast inside the Dutch oven.
Add 2 cups of water or beef broth to the pot.
Sprinkle the seasonings of your choice over the top of the frozen sirloin roast.
Put the lid on the Dutch oven, put it on the hob, turn the burner to high and bring the water or broth to a boil. Turn the heat down and simmer for approximately 40 minutes per pound.
Insert a meat thermometer into the thickest portions of the sirloin. A medium rare roast will be 62.8 degrees Celsius on the thermometer, while a well done roast will be 71.1 degrees Celsius or higher.
Place the frozen roast on a roasting rack inside a roasting pan.
Add 1/2 to 1 cup water or beef broth to the bottom of the pan.
Season the roast as desired.
Roast in the oven at 163 degrees Celsius for 40 to 45 minutes per pound.
Remove the roast from the oven when the desired doneness is achieved.
When cooking meats from the frozen state, always add approximately 50 per cent to the recipe cooking time. Use a meat thermometer to ensure that the meat is done.
