Using a cooking bag to roast a chicken is an effective way to prepare your chicken. The oven bag retains the moisture and seals in the flavour of any herbs, fruits or vegetables you add. The process is simple, and even a novice cook can look like a professional chef by doing a little preparation, and following some easy steps. Available recipes call for different ingredients and baking times, but are the same in that they all include packaging the ingredients of choice into an oven-safe bag for maximum flavour.
Preheat your oven to a temperature appropriate for the size of your chicken. For example, for a whole chicken between 1.35 and 1.8 kg (3 and 4 lb), preheat the oven to 180 degrees Celsius (350 Fahrenheit).
Place an open oven bag into an appropriately sized roasting pan. Make sure you have enough room around the sides of the roasting pan to remove the chicken.
Prepare your chicken by basting with butter, oils and herb blends, or by placing the ingredients such as herbs, fruits or vegetables under the skin of the chicken, or directly in the cavity. If the recipe calls for a bed of vegetables or fruits under the chicken, place these in the oven bag first before continuing your preparation of the chicken.
Place the prepared chicken into the oven bag, carefully centring the chicken and the bag inside the roasting pan. Finish basting the chicken if the recipe calls for this.
Pull the open ends of the oven bag together and tie the oven bag shut to seal in the chicken. Then cut a few tiny slits into the top of the oven bag to help the bag vent while baking and to keep the bag from popping open in the oven.
Bake the chicken for the length of time corresponding to its weight. For example, a 1.8 kg chicken will bake for approximately one hour and fifteen minutes. If the chicken is 2.2 to 3.2 kg (5 to 7lb), it may need to bake an additional 15 minutes.
Remove the chicken from the oven and place the roasting pan on a flat surface. Be careful when opening the oven bag as steam will rush out when opening.
Remember to cut small slits in the top of the oven bag before baking to let some of the heat and steam escape while baking.
Be careful when opening the bag when hot to avoid steam burns. Only use oven bags in conventional and microwave ovens.
