Cupcakes, like whole cakes, store well in the freezer. Freezing the cupcakes unwrapped allows the icing to harden, preventing it from sticking to the overwrap. Your cupcakes will remain fresh in the freezer for two to three months.
Freeze the cupcakes uncovered for one hour to harden the icing. Skip this step if freezing unfrosted cupcakes.
Tightly wrap each cupcake with cling film.
Cover each plastic wrapped cupcake with heavy duty aluminium foil.
Return the cupcakes to the freezer for up to three months.
Unwrap the cupcakes and defrost overnight in the refrigerator in a covered container. Leave unfrosted cupcakes in the cling film and aluminium foil wrappings to defrost in the refrigerator overnight.
