Fruitcakes are the most controversial of all baked goods. People either love them or dislike them intensely. If people do not like fruitcake, it is usually because they have probably eaten some commercially made cake that is a mass of artificial flavours and colours. The recipes for homemade fruitcake are so varied that they have different colours, ingredients and even shapes. Glazing fruitcake is a sweet and elegant touch.

Things you need

  • Homemade fruitcake
  • Cling wrap
  • Large mixing bowl
  • Electric mixer
  • 113gr. of semisweet chocolate
  • 1 tsp almond extract
  • 2 tbsp heavy whipping cream
  • Double boiler
  • Wooden spoon
  • Rubber spatula
  • Platter
  • 1 cup of toasted slivered almonds
  • Small saucepan
  • 5 tbsp light corn syrup
  • 4 tbsp pineapple or orange juice
  • Pastry brush

    Wrap the fruitcake in cling wrap and put it aside in a cool dry place.

    Combine the semisweet chocolate, whipping cream and almond extract in a double boiler over low heat, and stir until all the chocolate is melted.

    Let mixture cool. Spread the mixture over the fruitcake and place it on a platter. Sprinkle the almonds around the cake.

    Wrap the fruitcake in cling wrap and put it aside in a cool dry place.

    Add the syrup and juice to the saucepan and bring to a vigorous boil. Remove from the heat and brush half the mixture over the entire cake.

    Let the glaze cool on the cake. After it has hardened, bring the pan back to the stove and bring the liquid to a boil again on as low heat as possible. Remove it from the heat and brush the rest of the mixture over the cake. Do not wrap the fruitcake until the second layer is hard.
