Instructions

  1. 1

Grease the pan thoroughly with solid vegetable shortening. Butter, margarine or liquid vegetable oil is not recommended as they may cause the cake to stick to the pan.

  2. 2

Generously sprinkle flour in the pan for complete coverage.

  3. 3

Mix one package of cake mix according to the directions. Any flavour or type of cake mix can be used.

  4. 4

Pour the cake batter into the pan.

  5. 5

Gently tap the cake pan on the counter to even out the batter.

  6. 6

Place the cake pan on the middle rack of the oven and bake according to directions. Most cakes take between 30 to 40 minutes. You can use a toothpick to check if the cake is done.

  7. 7

Remove the cake from the oven and place it on a cooling rack for 10 minutes.

  8. 8

Place a cake board on top of the pan and gently turn over the pan to release the cake onto the board.

  9. 9

Let the cake cool completely, at least one hour.

  10. 10

Brush loose crumbs off the cake and off of the cake board.

  1. 1

Mix shortening and butter with an electric mixer.

  2. 2

    Add vanilla flavouring.

  3. 3

Slowly add sugar, one cup at a time, continuing to beat well at medium speed.

  4. 4

Scrape the bowl often. The icing will appear dry once all the sugar has been mixed in.

  5. 5

Add milk while beating at medium speed, until the icing appears light and fluffy.

  6. 6

Place a damp cloth over the bowl and place the icing in the refrigerator until ready to use.

  1. 1

Use a small spatula to smoothly ice the front windshield, headlights, mouth and sides of the cake with white buttercream icing that has been thinned down by adding water.

  2. 2

Ice the lightning bolt and the side windows using light blue frosting.

  3. 3

Use dark red icing for the wheel wells.

  4. 4

Using black icing and a small round tip, outline the car, windows, tires, lightning bolts, bonnets, mouth and headlights.

  5. 5

Use white icing to outline the number and add dot rivets to the hood.

  6. 6

Create the eyes with a smooth layer of blue icing topped with a dab of black icing for the pupil that is smoothed with your finger.

  7. 7

Squeeze small red stars out of a decorating bag, using tip 16 to cover the rest of the car.

  8. 8

Use yellow and orange frosting and star tip 16 to colour in the lighting bolt.

  9. 9

Decorate the number with orange frosting and the number 16 star tip.

  10. 10

Create a shell border along the bottom border of the cake using white icing and tip 21.

Tips and warnings

  • To keep chocolate crumbs out of top layer icing, apply a layer of very thin (almost water like) icing to the cake prior to decorating.
  • To thin icing, add a little bit of milk until you reach the desired consistency.
  • To thicken icing, add a little bit of confectioners' sugar until you reach the desired consistency.
  • Make dark red icing by adding brown to red.
  • Make orange icing by adding yellow to red.
