Mayonnaise is the creamy sauce that adds flavour to your favourite salads and comfort foods. Mayo lovers are 25 per cent more likely to use the condiment over any other and it is consumed far more by women than men, according to the Association for Dressing and Sauces. Create a homemade, low-fat mayonnaise that will rival its shop-bought competition, and wow your family with its taste and texture.

Things you need

  • 500 ml (2 cup) water
  • 15 ml (1 tbsp) corn starch
  • Medium-sized pan
  • 125 ml (1/2 cup) low-fat cottage cheese
  • 50 ml (1/4 cup) olive oil
  • Large bowl
  • 15 ml (1 tbsp) apple cider vinegar
  • 5 ml (1 tsp) table salt
  • Airtight container

    Pour the water and corn starch into a medium-sized saucepan.

    Stir the ingredients until they are well incorporated and bring the mixture to a boil on high heat.

    Continue to boil the mixture for two to three minutes and remove the mixture.

    Pour the low-fat cottage cheese and olive oil into a large bowl.

    Stir the ingredients and add 15 ml (1 tbsp) apple cider vinegar and the table salt.

    Pour the water and corn starch mixture into the bowl. Stir the ingredients until they are incorporated.

    Spoon the mixture into an airtight container and refrigerate for 24 hours. This will allow the mayonnaise to stiffen.

    Refrigerate and enjoy the low-fat mayo for up to one week.
