Think antipasto with beautiful red and green slices of tender roasted peppers. Deli counters display large jars of pickles and peppers as an inviting appetizer to their sandwiches. Pizza shops offer roasted peppers as an extra topping to their cheesy pies. Coffee shops offer healthy omelets stuffed with roasted peppers. In other words, roasted peppers are used everywhere and you can make them right at home. There is no need to by jarred peppers when fresh peppers are available year around. Open the bag and remove the pepper. Working over the sink, rub the black skin off the pepper. Most of it should slip off pretty easily. Wipe it with a paper towel to remove any extra specks. Alternatively, you can rinse it under cold water. Don't worry if every speck doesn't come off, they only add to the flavor.

Slice open the pepper and remove the seeds and stem. Slice into strips and season with a little olive oil and salt and pepper. Serve with sliced meats and cheese or other roasted vegetables. Whatever you don't use, place in a container and cover with a drizzle of olive oil.
