- 1 package skinned chicken pieces
- 2 tbsp butter
- 2 411gr cans of diced tomatoes
- 1 can sliced mushrooms
- 1 green pepper, sliced into ½-inch pieces
- 1 onion, roughly chopped
- 1 package fresh fettuccine
- ½ teaspoon salt
- ¼ teaspoon pepper
- 12-inch skillet
Heat the butter in a 12-inch skillet until it starts to melt and sizzle.
Add the chicken pieces to the skillet and cook over medium heat. Turn once and make sure that all the pieces are nicely browned. This should take 10 to 12 minutes.
Add the rest of the ingredients, except for the fettuccine. Cover the skillet and reduce the heat to medium-low. Cook for an additional 30 to 40 minutes, until the chicken is cooked all the way through and the meat is no longer pink.
Stir in the fettuccine. Cover and continue cooking for an additional 8 to 10 minutes until the pasta is tender. Serve immediately.
