Brazilian cuisine: How to make Cartola

Preparation method

Peel the bananas and slice in half, lengthwise. In a sauté pan with a heavy bottom, melt the butter over low heat. Raise the heat to medium and fry the banana halves in the butter, one side at a time. Once the banana turns a caramelised dark brown, it’s ready to flip over for the second side to caramelise.

Top the banana with a generous sprinkle of cheese and then add the remaining banana halves on top. The bananas should be piping hot so that the cheese is able to melt. Sprinkle with cinnamon, sugar and nutmeg. Serve freshly after frying.

Tips and warnings

  • This recipe can be made with regular ripe bananas or ripe black plantains. Do not use green plantains. Cartola means top hat in Portuguese.
