Brazilian cuisine: How to make Maracuja (passion fruit) mousse

Preparation method

Whip together condensed milk, double cream and the defrosted passion fruit concentrate. If you cannot find passion fruit concentrate, you can substitute for fresh passionfruit and 1 tablespoon of sugar.

The mixture should be well blended together and mixed for at least 5 minutes so it becomes creamy and frothy with a thick whipped texture. Once you have whipped the mousse, put in the refrigerator to cool for at least two hours. After it has chilled and set, decorate with the pulp and seeds from the fresh passion fruit. Serve chilled.
