Brazilian sweet guava roll cake
Beat together butter with sugar until it forms a creamy mixture. Then, one by one add the egg yolks. Beat well until combined. Add the egg whites and mix for a few more minutes. Slowly add the sifted flour and stir with a wooden spoon.
Spread the dough mixture onto a cookie tray that has been lined with baking paper. Stick in the oven at 200 C/ 400 F and bake for about 5 minutes. You will know the cake is ready once the edges begin to lightly brown.
Make the guava filling by heating the water on low and add the guava paste. Heat until the guava has melted and combined with the water to form a marmalade. Set aside and let cool.
Take the cake out of the oven and let cool for about 10 minutes. Gently and evenly spread a layer of guava filling on top. Carefully roll up the dough, removing the baking paper, until it forms one even roll. Sprinkle with sugar and serve.
