Place your oven to 180C (350F). In a pan, heat olive oil until warm and sauté onions, peppers, and garlic until soft and translucent. Add the crab meat and cook for 3-5 minutes. Add tomatoes and simmer for another 2-3 minutes.

Pour the coconut milk and grated coconut. Stir well and turn off the heat. Add lemon juice, salt, pepper, parsley and Old Bay seasoning. Mix well. Crab mixture should be soft, well mixed and very moist. If dry, add a bit more coconut milk. Set crab mixture aside and allow to completely cool.

Cooking Method

Place mixture in clean empty shells and press it down with the back of a spoon until it fills the shell.

Sprinkle breadcrumbs and Parmesan cheese (optional) over crab mixture and place in oven. Bake for 15 minutes or until lightly browned. Serve with lime wedges and hot sauce.
