Oxtail with watercress
Rinse the oxtail with water. Boil in a lemon juice and water mixture for 10 minutes. Drain and place in a bowl and set aside.
In a medium saucepan, heat oil and sauté onions, garlic and green pepper. Then,add the oxtail, onions, garlic, chopped tomatoes, salt, bay leaf and water into the pressure cooker.
Cook the oxtail for one hour, or until the meat is tender and falls off the bone. Once the oxtail is cooked, and the watercress to the pot.
Serve the dish with rice, mashed potatoes and polenta, making sure to pour the juices from the crock pot over the meat as a sauce.
