How to make cheesy Sriracha vegetable omelette

Preparation method

Use a heavy-bottom frying pan and lightly add some olive oil. Sauté seasonal chopped vegetables (mushroom, onion, asparagus, tomatoes, green peppers, etc) until soft. Set aside.

Then, take out a medium size bowl and crack 4 eggs inside. Beat with a fork until smooth and add the diced butter and Sriracha sauce. Use another non-stick frying pan and grease with olive oil. Turn the stovetop burner on high and wait until the oil becomes hot. Once the pan starts smoking, quickly pour the eggs into the pan. With a spatula, move the eggs around in the pan while moving the pan in a circular motion. Using a wooden fork or a spatula and working in a circular motion, move the eggs in the pan. Once the eggs form a light skin, turn the heat to low and pick up the pan tilting the pan so that the egg liquid moves to the bottom of the pan.

Fold and serve

Stop moving the pan and add the seasonal sautéed vegetables filling only one half of the pan. Sprinkle cheese on top.

Using a spatula or fork, carefully fold half of the omelette (without the vegetables and cheese) over the other side. Slide onto a plate and serve immediately.
