Gravy gone healthy
In a bowl, whisk ½ cup roast drippings with flour in a small bowl. Mix the two together until you make a smooth paste-like mixture. Set aside.
Turn the stovetop to medium heat and place a heavy-bottom pan. Add the remaining ½ cup of the roast drippings to the pan along with the apple cider, thyme, bay leaves, apples and garlic. Turn the heat to high and bring to a boil. This should take about 5 minutes and the liquid should reduce to half. Then, pour in the remaining 3 cups of stock and bring to a boil again. After 10 minutes you will notice the liquid reducing again.
Grab the reserved flour mixture and whisk it into the pan. Bring the mixture to a boil, whisking constantly until the gravy thickens.
Turn off the heat and sieve the gravy liquid with a fine mesh strainer to discard any solid pieces. Season with salt and pepper and serve with your main dish.
