Summer banana soup recipe
Take a saucepan and heat the oil. Once it gets hot, add the spring onion and garlic and stir for two minutes. Then toss the ingredients (except half of the chilli peppers), adding the ripe bananas last.
Move the mixture to a blender, food processor or use an immersion mixer and puree until smooth. Make sure to blend all the chunky bits.
Garnish and serve
Return the mixture to the pan and toss in the chilli peppers. If serving hot, divide into four bowls and garnish with coriander, limes, spring onions and cream. If serving chilled, cool in the refrigerator for about an hour before serving and garnishing.
