Plain yoghurt can be made into low-fat mayonnaise by using yoghurt instead of eggs in a mayonnaise recipe. If you are watching your calories or cholesterol, plain yoghurt-based mayonnaise can be a healthy alternative condiment to regular mayonnaise.

Plain Greek Yogurt

Plain Greek yoghurt is best for making mayonnaise because it is thick and has a low water content. Greek yoghurt creates a rich and creamy mayonnaise when mixed with a tablespoon of oil and a teaspoon of Dijon mustard.

Plain French Yogurt

Also known as custard or Swiss yoghurt, French yoghurt is thickened with various ingredients such as agar, guar gum, carrageenan and gelatin. French yoghurt makes mayonnaise with a rich and creamy consistency. To make mayonnaise, select French yoghurt with no sugar added.

Plain Nonfat Yogurt

The most watery in consistency and the least expensive, plain nonfat yoghurt can be used to make mayonnaise when drained through a sieve lined with fine muslin or wire mesh. Draining removes the excess liquid in plain nonfat yoghurt. Once drained, plain nonfat yoghurt can incorporated into a yoghurt-based mayonnaise recipe.
